In bowl of a stand mixer stir together water and yeast; let stand until foamy. Meanwhile, in a small saucepan over low, heat milk just until it begins to steam. Add the 6 tablespoons cut-up butter and crème fra?che mixture into yeast mixture along with eggs and 1 1/2 cups of the flour.

Add the granulated sugar and the 1 tablespoon kosher salt. Beat with the stand mixer on low speed for 30 seconds, scraping bowl. Mix until smooth Gradually beat in remaining 3 cups flour with mixer for 3 to 4 minutes until dough begins to pull away from sides of bowl and is only slightly sticky. "Don't be tempted to add more flour," says Scott. Let it rise.

Transfer dough to a bowl.

Cover surface of dough with plastic wrap that has been lightly coated with softened butter, then cover bowl with second piece of plastic wrap. Let rise in a warm place until double in size (about 90 minutes). "Don't rush it. Slow rising creates better flavor," says Scott.

Make sticky topping.

While dough is rising, butter sides of a 3-quart rectangular glass baking dish. In a medium bowl, stir together the 1/2 cup softened butter, the 1 cup brown sugar, honey, and pinch of salt until well combined. Stir in the 3 tablespoons water.

Spread in pan.

Transfer topping to pan and with a spatula distribute in an even layer.

Add nuts.

Scatter pecan halves over butter-sugar mixture. "Look for fresh pecans. I prefer Georgia's," Scott says. "Buy a pound and keep them in the freezer — it's less expensive than buying a few ounces at a time. I order my pecans from Pearson Farm."

Roll out dough.

Remove the risen dough from bowl and gently roll it out on a very lightly floured surface, to an 18 x 15-inch rectangle.

Coat with butter. Spread the 1/4 cup melted butter evenly over dough. Prepare filling In a bowl combine granulated sugar, brown sugar, Ceylon cinnamon, and a pinch of salt. Sprinkle evenly on dough. Ceylon cinnamon has a sweeter flavor, a softer texture, and lighter color.

Sprinkle nuts and dates.

Distribute the 1/2 cup chopped pecans and the dates over the dough. "The dates aren't traditional," says Scott, "They're a delicious surprise that echoes the flavor of the caramel on top."

Form into a roll.

Tightly roll the dough beginning at one long side, keeping the roll as uniform as possible. Pinch the edges to seal the roll. Uncover and bake the rolls about 40 minutes, rotating the dish once and tenting loosely with foil if rolls begin to brown too quickly ("which they probably will," says Scott).

Rest and serve.

Let pecan rolls stand on rack for 5 minutes. Invert onto serving platter. If made ahead, reheat, uncovered, 15 to 20 minutes in a 350? F oven or until warm.

Cherry Cheese Cake

Ingredients:
20 Oreo cookies, finely crushed
5 (8-oz) packages of cream cheese (softened)
1 (21-oz) can cherry pie filling
3 tbsp melted butter or margarine
1 cup sour cream
3 tbsp flour
1 cup sugar
1 tbsp vanilla
4 eggs

Directions:
Line a 13 x 9-in baking pan with aluminum foil, making sure that he foil extends up over the sides of the baking dish. In a small bowl, mix the butter and the Oreo crumbs together. Press this mixture into the bottom of the pan (this will be your chocolate graham-like crust). In a large bowl, use a fork to soften the cream cheese a bit, then add the flour, sugar, and vanilla. Use a mixer set to a low speed and blend the ingredients together. Pour this over the Oreo crust. Bake at 325 degrees F for about 40 minutes, or until the center of the cheese cake is nearly set. Allow the cake to cool completely, then refrigerate for at least 4 hours. Top with the cherry pie filling. Use the foil to lift the cake from the pan for easy cutting and serving.

Pineapple Upside Down Cake

Ingredients:
1 package yellow cake mix
1 jar maraschino cherries, drained
1 can sliced pineapple rings, drained
1/2 cup flaked coconut
1/4 cup packed brown sugar
2 tbsp butter

Directions:
Coat a large cake pan with 2 tablespoons of melted butter. Sprinkle 1/4 cup of brown sugar onto the butter. Sprinkle 1/2 cup of coconut over the brown sugar. Arrange the pineapple rings (no overlapping) on top of the coconut, then place a cherry in the center of each ring and in between rings, if you like. Prepare the cake mix as directed on the box, then pour the batter over the pineapple rings. Bake at 350 degrees F for 40 - 50 minutes women's jackets (or until a toothpick inserted into the center comes out clean). Cool for about 20 minutes. To transfer to a serving plate, place the plate on top of the baking dish, then carefully turn over. The cake should slide out of the baking dish and onto the serving plate.

Banana Cake

Ingredients:
1 package yellow cake mix
1 tsp baking soda
2 very ripe bananas, mashed

Directions:
Mix the yellow cake batter according to the directions on the box. Mash the bananas together with the baking soda. Stir this into the cake batter and mix well. Pour the batter into a greased 9 x 13-in baking dish. Place in the oven and bake at 350 degrees F for one hour. DO NOT preheat the oven before placing the cake in. Let the cake cool thoroughly before serving. Can be topped with cream cheese frosting after it has cooled.

Cinnamon Coffee Cake

Ingredients:
1 package yellow cake mix
1 package instant butterscotch pudding mix
1 package instant vanilla pudding mix
1 cup vegetable oil
1 cup water
4 eggs
1 tablespoon ground cinnamon
1 cup packed brown sugar
1 cup chopped walnuts

Directions:
Grease a 10-in Bundt cake pan (or a 9 x 13-in baking pan). Stir together the cake mix, butterscotch pudding mix, and vanilla pudding mix. Add the oil, water, and eggs and blend together well. In another bowl, mix together the cinnamon, brown sugar, and nuts. Pour half of the cake batter into the pan, then sprinkle half of the nut mixture on top. Pour the remaining batter into the pan, then top with the remaining nut mixture. Bake for 20 minutes at 350 degrees F, then turn the oven temperature down to 325 degrees F and bake for another 40 minutes.

Exercise the heck out of her. Really wear her out: the longer you expect to be away, the more exercise she should get before you leave.

For example, if you are leaving for work in the morning, she will probably be by herself for at least four hours; and, if you have got a dog-walker to take her out mid-day instead of coming back yourself, she will not see you as the person she really cares about - for at least nine hours.

So she needs a good, vigorous walk (fifteen to twenty minutes is the absolute minimum here!) before you walk out that door. More is even better.

Distract her from her boredom, loneliness, and anxiety by giving her an attractive alternative to pining, pacing, and whining. All dogs love to chew and why not play on this predisposition?

Get a couple of marrowbones from the butcher, bake them in the oven for 20 minutes (so they go nice and hard and crunchy and so she can not smear marrow all over women's jackets your furniture), slice them up into chunks of a few inches long, and give her one about 15 minutes before you leave.
